On the southeastern foothills of Mount Kenya, you can find Embu county where the Gakundu Coffee Factory can be found. It’s located in the central part of Kenya which is one of the most well-known regions for coffee growing in the world.
As a basic rule, cherries have to be perfectly ripe, sorted, freshly pulped, fermented and washed to become what we call parchment coffee (this is when the coffee is still one step away from becoming ”green coffee”). The parchment needs to be dried to a moisture content of around 10.5% which is our acceptable level for hulling, storage and roasting.
Considering the many steps in wet processing, focusing on quality is possible when producers at the Gakundu FCS are paid some of the highest returns for their coffee for achieving specific results.
