Buki is the name of a washing station in a small town Uraga in the Guji region. During harvest, the local farmers bring their coffee daily to the washing station. The coffees are then washed and de-pulped on the same day. The next step is to ferment the coffee overnight and do the final wash and dried on the raised African beds.
Coffees in Ethiopia are typically traceable to the washing station. It is common for coffee farmers to own small land and to plant their crops. During harvest, they sell the cherry to the washing station or cooperative at the current market rate. The coffees are sorted and processed into lots. Because the washing station or cooperative receives cherry from many smallholders farmers, it’s extremely difficult to trace the coffee to the farm.
